How to Carve a Watermelon Centerpiece

Instructions

    • 1
Cut ½ inch from one of the long sides of the watermelon to create a stable base for the melon.
    • 2
Set the watermelon on the cut surface on a platter, and draw a line 2/3 of the way up the side of the watermelon all the way around the melon for the top opening of the basket.
    • 3
Draw a 2-inch wide handle across the top width of the watermelon.
    • 4
Cut along the lines of the handle, stopping where they meet the basket opening line.
    • 5
Slice along the basket opening line, leaving only the part where the handle joins the basket intact. Remove the cut portions of watermelon and scoop, leaving behind a basket and handle shape.
    • 6
Scoop out the watermelon flesh with a melon baller until the white rind remains.
    • 7
Turn the melon upside down over a sink to drain out any of the watermelon juice.
    • 8
Fill the watermelon centerpiece with the balls of watermelon flesh or with fruit salad of your choice. Keep chilled until ready to serve, up to one hour.

Pinoy Fruit Carver Shares Talent in Europe

A Europe-based Filipino is famous for turning a simple fruit into an extraordinary miniature work of art.
Fruit carver Danilo Palit is admired by thousands of people who have witnessed his skills in Europe.
“Wherever I give demonstrations, people are very much fascinated with this art. Since this is a God-given talent, I am always ready to share this to anyone,” Palit said.
Palit recently demonstrated his talent in the presence of about a thousand passengers in a luxury ship that sailed the Mediterranean Sea.
Armed with a small but sharp carving knife, Palit turned an ordinary papaya into a beautiful bouquet of flowers, a raddish into a tiny rabbit, and a rare orchid from a carrot.
“He is really a very talented guy. And people joining our cruise appreciate his talent. This is the very reason why this demonstration and seminars on fruit carving are important part of our cruise program,” said the Romanian cruise director, Danny Buru.
Palit is a native of Paete, a small town in Laguna famous for hand-crafted and carved wooden products.
“I came from a wood-carver family. Kaya nga nagkahilig ako na mag-ukit ng kahit anong klaseng bagay. I am very glad that I have been given the opportunity to share my talent here in Europe,” Palit told ABS-CBN Europe News Bureau.
Before coming to Europe, Danilo worked for a prestigious five-star hotel in Manila. There, he learned the art of fruit carving. He aimed high and was given the chance to travel abroad, where he now shares his talent.
“I am also conducting seminars and lessons on the technique of fruit curving. Mahirap din sa umpisa since, prior to the execution of your carving skill, it is essential to make all the proper arrangements. The carver must understand the texture of each fruit and use its natural color to imitate that of the chosen subject,” Palit explained.
Palit is planning to publish a book on creative carving. He plans to presents simple, easy to make, and highly attractive ways of carving fruits and vegetables for salads, garnishes, unusual and exotic dishes, light-as-air fruit-based desserts, as well as table decorations.

Other Tools and Functions

Melon Peeler

  • The melon peeler is the first tool needed if working with a melon. It allows the removal of the rind, producing a fruit that can be eaten whole. Not all chefs choose to remove the rind of a melon, but rather carve the rind itself into an attractive shape. For those that do remove the rind, the end result is a fruit capable of being eaten whole. The shaved rind can then be used for other purposes, such as decorating the perimeter of the plate as a garnish. The often vibrant colors of the fruit rind can be attractive in presentation.

Seeding Knife

  • The seeding knife helps to quickly remove seeds with a minimum of damage to the surrounding fruit. This is an essential step, as the harsh crunch of a seed can quickly spoil an otherwise refined meal. Most sets come with at least two seeding knives, one designed for the removal of small and isolated seeds, such as those found in an apple, and another for larger seeds found concentrated in one area, such as the seeds of an acorn squash.

Bird's Beak Knife

  • The bird's beak knife isn't used for general cutting, but rather for purely decorative purposes. Its v-shaped blade leaves unusual marks that can be patterned to produce attractive and abstract designs. Those with a broader lip are ideal for producing smooth circular cuts, while the sharper v angles can be used for rigid geometric designs.

Paring Knife

  • The paring knife is the essential tool of the fruit and vegetable carving trade. It is a short-bladed knife that allows precise cuts throughout the produce. With the paring knife, you can sculpt fruit like a chisel to marble. Because of its straight design, it can be used to produce cuts of any shape. While bird's beak knives are limited in their functionality at the trade-off of being easy and fast to use, the paring knife requires more skill to master and more time use, but this is more than made up for with its versatility. The ideal set of carving knives would contain at least one paring knife and a selection of bird's beak knives, so that even once mastery is gained with paring knife, designs with the bird's beak can be produced rapidly.

MAD CARVING SKILLS!

REY VILLAFANE

Ray Villafane, Visionary and Patriarch of the Villafane Studios Sculpting Family was born in Queens, New York to Reinaldo Villafane and Virginia (Guzman) Villafane. He spent his childhood on Long Island and was raised alongside two sisters and one brother. At a very young age Ray showed a knack for art; a passion that his mother approvingly encouraged him to pursue. Throughout his academic career, Ray’s classmates and teachers also recognized his natural artistic abilities. Ray graduated from the School of Visual Arts in New York City in 1991. However, also having a passion for children, he elected for a career in teaching. From 1993 to 2006 Ray taught Art for students grade K-12 in Bellaire, Michigan. It was during his teaching tenure that Ray began “dabbling” in pumpkin sculpting, initially as projects with his students. After several custom-carved requests from students’ parents, Ray realized he was on to something with his pumpkins and started offering them to local hotels and restaurants. It became his fall hobby for several years.  In 2003, Ray married Tamara Schmidt. While Ray and Tammi’s union gave rise to a blended family, they also had children together. It was during this time that Ray was encouraged by his wife to “find an art medium he really enjoyed and run with it”; they could use his obvious talent to supplement their income and support their large family. Ray decided to contact a former SVA classmate whom he had thought to be working for Disney as an Animator. Upon speaking, he learned that the friend was actually sculpting for Disney. Having really sparked Ray’s interest, he flew to New York to spend a weekend observing his colleague in action. That weekend clarified for Ray exactly what he wanted to do; he went home and started sculpting his first piece.

You can find Ray on Facebook where fans have fondly nicknamed themselves “Villa-fans”.
